Spaghetti Carbonara

I recently read the novel "Wild Side" by Elsie Silver. This book is the third in the Rose Hill series. This series is what got me hooked on reading Elsie Silver books. After I read Wild Love by her, the first book in the Rose Hill series, I started reading the Chestnut Springs series. Her books take place in Western Canada in small towns.

Wild Side is an enemies to lover style of book. Tabitha is the Female Main Character and Rhys is the Male Main Character. The two of them are battling for custody of Tabitha's Nephew. Eventual they come to a comprise and sparks fly.

One of the most memorable scenes for me and probably one of the most significant scenes in the novel is when Tabitha makes Rhys Spaghettis Carbonara. It is late at night and they are settling in for the night. Tabitha goes up to her room and Rhys goes to the area of the basement that Tabitha set up for him. Prior to heading their separate ways, Rhys' stomach growls from hunger. Tabitha eventually feels guilty that he is hungry and makes him spaghetti carbonara. Being a chef, she feels compelled to take care of those she cares about through food. This dish also ends up becoming Rhys' favorite dish.

After this scene the two main characters start to let down the walls and allow one another into their worlds slowly. Tabitha is definitely slower in allowing Rhys into her world. She is fearful that if she slips or there is something about her Rhys does not like then he may take her nephew away. Rhys is realizing that Tabitha and her family are more caring than he was lead to believe. I do not want to give a way too many spoilers so if you want to know why there is a custody battle over Tabitha's nephew then you will have to read the book to learn more.


I really enjoy making Italian dishes. Spaghetti Carbonara is a dish I do not get to make often. After reading Wild Side I really wanted to make this dish. It is surprisingly easy to make. There is not much prep that is involved. I do prefer to use freshly shredded cheese when making this dish. The way fresh cheese tastes and melts is key in making a good carbonara. Try making this dish while you read Wild Side by Elsie Silver.

Ingredients

  • 12 oz Spaghetti

  • 1/2 cup Pancetta, chopped

  • 1 clove of garlic

  • 4 tablespoons butter

  • 1/2 cup shredded Parmesan Cheese

  • 1/2 cup shredded Romano Cheese

  • 2 eggs beaten

  • Salt and pepper to taste


Directions

Step 1: Start boiling water in a large pot for the spaghetti. Once the water has come to rapid boil, add the spaghetti. While you are cooking the spaghetti you need to start on making the Carbonara. In a large skillet melt the butter. Once the butter has melted, add the pancetta and clove of garlic. The garlic is whole, do not chop it.

Step 2: Once the pancetta is cooked and the clove of garlic has browned, remove the glove of garlic. Add the cooked spaghetti to the pan with the pancetta and butter. Toss the noodles so that they are coated with the butter. Add half of the cheese and the beaten eggs. Continue to toss the noodles until they are coated with the eggs. Add the remaining cheese. Serve immediately.
