Never The Same, Lemon Pie

I just read The Seven Year Slip by Ashley Poston and I loved this book. I really enjoyed how completely fictional this story was but how it made you feel that it could really happen. I know that concept seems confusing but trust me if you read this book you will understand what I mean. This is a romance novel and it will really keep you invested the whole time.

Clementine and Iwan are the main characters of the novel and the love interests. Clementine inherits her Aunts magical apartment. The apartment will slip seven years, usually when the tenants are in a crossroads. So either you are living in the apartment and it slips seven years in the past or you slip seven years in the future. Clementine's Aunt has owned the apartment for almost 30 years so when she takes over the apartment she hopes that she will get to see her Aunt again. Clementine is definitely surprised when the first time the apartment slips in time she sees a strange man who is most definitely not her Aunt. She learns that his name Iwan and that she is having the most fun she has in a long time when she is with him.
The characters have no control in when the apartment will slip in time. They are just going to be surprised when they open the door to the apartment. When Clementine first meets Iwan, he calls her lemon. He says it's because her name is "Cllllemontine." He also decides that he is going to make his grandfather's lemon pie for her that is never the same twice. The lemon pie is referenced many times throughout the story and suits the nickname he has given her.
Lemon happens to be my book boyfriend's favorite flavor. I mentioned it was his favorite flavor when I made the lemon poppyseed muffins. He will never pass on a food with lemon in it. So I was very excited to read this book and then learn about lemon pie. I have had Lemon Meringue pie and Lemon Meringue cake plenty of times. Lemon Pie is not the same as these two. Lemon Pie looks almost like a Key Lime pie. The middle part of the pie is not like a custard or pudding but is so delicious. After making lemon pie and then eating I can say that it is my favorite way to make a dessert with lemon in it. My book boyfriend definitely enjoyed eating and requested me to make it more often.

Never Same Twice, Lemon Pie
Ingredients
Graham Cracker Crust
11 Graham crackers
5tbsp unsalted butter, melted
2tbsp packed brown sugar
Pie Filling
2-14oz cans of sweetened condensed milk
4 large egg yolks
zest of one lemon
Juice of 5 lemons
1/2tsp Vanilla extract
1tbsp sugar
Whipped Cream Topping
1 cup heavy whipping cream
1 tsp vanilla extract
2 tsp sugar
Directions
Step 1: Make the graham cracker crust. In a food processor place the graham crackers, brown sugar and melted butter. Process the ingredients until they come together slightly. In a greased 9-inch pie pan, put in the graham cracker mixture. Spread out the mixture and allow for it to go up the sides of the pie pan. Press down the mixture so that it firms up. Place in a pre-heated 350 degree Fahrenheit oven for 8 minutes.
Step 2: While the crust is baking start on the pie filling. In a large bowl whisk the sweetened condensed milk, lemon zest, lemon juice, sugar and vanilla. Mix until well combined. When the pie crust is done, pour the pie filling into the pie pan with the crust. Place back in the oven and bake for about 20-25 minutes. You want the pie to be almost set. So when you shake the pie it should jiggle a little bit in the center.
Step 3: Let the cool for an hour on the counter. Then place in the fridge and let chill for three hours to overnight. This will give time for the rest of the pie to fully set. When you are ready to serve make the whipped cream topping.
Step 4: Whipped Cream topping. Prior to making the topping place the mixing bowl and whisk in the fridge. You want everything to be chilled when making the whipped cream. Once everything has chilled take the mixing bowl, whisk and whipping cream out of the fridge. Pour the whipping cream in the chilled bowl and add the vanilla extract and sugar. Whisk the mixture vigorously until peaks form. Spread the mixture on top of the lemon pie. Serve and enjoy with others.
