Breakfast Burritos

Breakfast Burritos are a great morning dish that allows for variety. They are also great to make a bunch ahead of time to then freeze and reheat when ready. This is what I do for my book boyfriend. He leaves for work so early in the morning that he does not have breakfast at the house. He chooses to have breakfast when he arrives at work since he arrives so early as to avoid traffic. He is able to keep the burritos in the freezer at his job and is fortunate enough that no one will eat the burritos on him.

When I read Leave Me Behind by K.M. Moronova I thought about early on in the book when the two main characters go to the diner after spending most of the night together. The two of them do not know yet that they are about to be in the same Unit within the dark forces. They both see the time they are spending with each other as their chance of feeling normal before heading back to their unit. The FMC, Nell, is a new member to a unit and knows that she will not get a big welcome. She also knows that the person she is going to be partnered with in the unit is difficult and his identity is kept secret. The two of them do things that would seem normal to everyday civilians such as going to a diner and sharing a meal with someone. Nell orders eggs benedict and Bradshaw orders a breakfast burrito. When I saw what he ordered I immediately thought of the breakfast burritos I make for my book boyfriend.
Since my book boyfriend can be a little picky with his food because of textures, I keep my burritos simple. However, the best thing about burritos is that you can make them any way you want. You can add vegetables such as onion and pepper if you want. You can always change up the meat option you put in the burritos. I usually do breakfast sausage in the burritos but I have put ham and bacon in the burritos in the past. All of which have made the burritos seem a little different.
As far the book, Leave Me Behind is a dark military romance. This book is not for everyone. I happened to really like the story and relationship growth between Nell and Bradshaw. Being that this book is dark there are quite a few scenes that are graphic. Usually these scenes involve Bradshaw and Nell. Bradshaw often did things to Nell so that she would want to quit their unit. That was never an option for Nell so she dealt with all the hazing that came her way. While reading the novel I felt that Bradshaw's actions were his way of trying to keep Nell safe. At first it seemed like he did not want her on the unit because the unit she originally came from all died during a mission. The more I kept reading and the more I kept seeing certain things he was doing or reading his point of view the more I believe he was doing everything to keep her safe.
If you are thinking of reading this book then I recommend that you read the synoposis of the book first. Also check the warnings that the other has posted in the book and on their website. I do not want anyone to be surprised with the contents of this book.

Breakfast Burritos
Ingredients
1 dozen eggs
1 cup of milk
salt and pepper to taste
1/2 cup of shredded cheese
1 pound of breakfast sausage
3 tablespoons butter
12 to 14 - 8 inch round soft taco tortillas
Directions
Step 1: In a large mixing bowl, add the cracked eggs, milk, salt, pepper. Whisk until the egg yolks are completely broken up and everything is blended together. Add the shredded cheese and stir.
Step 2: Heat a large skillet over medium high heat. Add the breakfast sausage and break up the sausage so that it is crumbly. Continue to cook the sausage, stiring ocassionally so that the sausage does not stick to the bottom. Once the sausage is browned put the sausage in a bowl and set aside.
Step 3: In the same skillet that the sausage was cooking in you will cook the eggs. Add the butter and allow to melt. When the butter has completely melted add the eggs. Stir the eggs with a wooden spoon or spatula to make scrambled eggs. Cook until the eggs are fully cooked, about 10 minutes on medium heat.
Step 4: In a smaller skillet, heat the tortillas one at a time. This allows them to be easier to work with. Fill the burritos with the eggs. Each tortilla should have about a 1/4 to 1/2 a cup of egg filling depending on how full you like your burritos to be. You can also add some ketchup in the burritos at this point. Fold up the tortillas. Start by slowly folding the sides of the burrito together and then slightly letting them separate. Then take the bottom part of the burrito (the part closes to you) and start to roll it over the slightly folded over sides. Tuck the filling as you are rolling the tortilla.
Step 5: In a skillet (you can use the same skillet you used to warm the tortillas) put the burritos with the flap side down. You are going to brown the burritos for 2 minutes. Just enough time to ensure that the burrito is sealed closed. Then turn them to the other side to brown for another 2 minutes.
Step 6: You can enjoy the burritos right away. You can also let them completely cook and then put them in the freezer in a ziplock bag. I will wrap my burritos individually in plastic wrap before putting them in the bag to ensure and extra barrier against freezer burn.
